Function
Ficin is an enzyme preparation. Mainly used for cold resistance of beer (hydrolyze protein in beer to avoid turbidity caused by cold storage); Meat softening (hydrolyzing muscle protein and collagen to tenderize meat); Dough conditioner for baking; Emulsion coagulant (instead of rennet) used in cheese manufacture. The shell of the shrimp can be separated from the meat to achieve mechanized husking, and the clam meat can be separated from the viscera.

Application
Ficin's main action principle is the hydrolysis of protein, can be used in cleaning skin care products. Ficin is widely used because of its high temperature resistance, good activity, good stability and insensitivity to PH changes.
