Introduction
Chitosan succinate is used for freshness-enhancement instead of MSG as an organic salt synthesized from Chitosan and succinic acid. It resolves the health issues emerging from the extra sodium intake during application of conventional salt, reduces the prevalence of hypertension, diabetes and kidney diseases that resulted from excessive sodium intake, and provides multiple effects of Chitosan salts including immunological regulation, antibacterial activity, adsorption of heavy metal and film formation, etc. as a green food additive.
